  • 2 large eggplants, diced
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • Sesame seeds and green onions for garnish


  1. Preheat a wok or large skillet over medium-high heat.
  2. In a small bowl, mix together miso paste, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger to create the glaze.
  3. Heat vegetable oil in the wok, add diced eggplant, and stir-fry until slightly browned and softened.
  4. Pour the miso glaze over the eggplant, stirring to coat evenly. Cook for an additional 2-3 minutes.
