Mediterranean Zoodle Salad


  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • For the dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste


  1. Toss the spiralized zucchini, cherry tomatoes, cucumber, olives, red onion, and feta cheese in a large bowl.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad and toss until well-coated.
  4. Sprinkle fresh parsley on top and serve chilled.
