  • 1 eggplant, cut into chunks
  • 1 zucchini, sliced
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 red onion, cut into wedges
  • Cherry tomatoes
  • Wooden skewers, soaked in water
  • Olive oil
  • Fresh oregano, chopped
  • Salt and pepper to taste


  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the eggplant, zucchini, bell peppers, red onion, and cherry tomatoes with olive oil, fresh oregano, salt, and pepper.
  3. Thread the marinated veggies onto the soaked wooden skewers, alternating colors for a visually appealing presentation.
  4. Place the skewers on the preheated grill and cook for 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
  5. Remove from the grill and serve immediately. Optionally, drizzle with extra olive oil and sprinkle with more fresh oregano for added flavor.
