  • 2 large eggplants, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C).
  2. Place the sliced eggplants on a baking sheet.
