Mediterranean Quinoa Breakfast Bowl
- 1 cup quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
- Rinse the quinoa under cold water.
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender.
