Mediterranean Quinoa Breakfast Bowl


  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender.
  3. Fluff the quinoa with a fork and let it cool slightly.
  4. In a large bowl, combine the cooked quinoa, olive oil, cherry tomatoes, cucumber, olives, feta cheese, and lemon juice. Toss until well combined.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve immediately.
