Mediterranean Orzo Stuffed Tomatoes


  • 6 large tomatoes, hollowed
  • 1 cup orzo pasta
  • 1/2 cup Kalamata olives, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).
  2. Cook the orzo according to package instructions. Drain and set aside.
  3. In a bowl, combine cooked orzo, Kalamata olives, feta cheese, fresh basil, olive oil, minced garlic, salt, and pepper.
  4. Cut the tops off the tomatoes and scoop out the seeds and pulp. Stuff each tomato with the orzo mixture.
  5. Place the stuffed tomatoes in a baking dish and bake for 20-25 minutes, or until the tomatoes are tender.
  6. Remove from the oven, let them cool slightly, and serve. Garnish with additional fresh basil and feta if desired.
