Mediterranean Orzo Pilaf


  • 1 cup orzo
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Cook orzo according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes and cook until they start to soften.
  4. Stir in cooked orzo, Kalamata olives, and dried oregano. Cook until heated through.
  5. Remove from heat and top with crumbled feta cheese. Season with salt and pepper to taste.
