  • 2 cups dried green lentils
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup chopped kale
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste


  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.
  2. Add lentils, diced tomatoes, artichoke hearts, kale, oregano, and cumin. Stir well.
  3. Pour in the vegetable broth and bring the stew to a boil. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.
