  • 1 cup dried lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil


  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
  2. Add dried lentils, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
