Mediterranean Lemon Chicken Soup


  • 4 boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Season chicken breasts with salt, pepper, and 1 teaspoon of dried oregano.
  2. In a large pot, heat olive oil over medium heat. Add chicken breasts and brown on both sides. Remove and set aside.
  3. In the same pot, sauté onions, garlic, and carrots until softened.
  4. Add chicken broth, orzo, lemon juice, and remaining oregano. Bring to a simmer.
  5. Shred the cooked chicken and add it back to the pot. Simmer until orzo is tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
