Mediterranean Lemon Chicken Soup
- 4 boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 cup orzo pasta
- 2 carrots, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
- Season chicken breasts with salt, pepper, and 1 teaspoon of dried oregano.
- In a large pot, heat olive oil over medium heat. Add chicken breasts and brown on both sides. Remove and set aside.
- In the same pot, sauté onions, garlic, and carrots until softened.
- Add chicken broth, orzo, lemon juice, and remaining oregano. Bring to a simmer.
- Shred the cooked chicken and add it back to the pot. Simmer until orzo is tender.
