Mediterranean Chickpea Couscous



  • 1 cup couscous
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste



  1. Prepare the couscous according to package instructions.
  2. In a large mixing bowl, combine the cooked couscous, chickpeas, cherry tomatoes, cucumber, Kalamata olives, red onion, and feta cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the couscous mixture and toss until everything is well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
