Ingredients

  • 1 block feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 8 oz pasta (like penne or rigatoni)
  • Fresh basil leaves for garnish
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a baking dish.
  3. Surround the feta with cherry tomatoes and minced garlic. Drizzle olive oil over the tomatoes and feta. Season with salt and pepper.
  4. Bake in the preheated oven for 25-30 minutes until the tomatoes burst and the feta turns golden and soft.
  5. While the feta is baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Remove the baking dish from the oven and mash the roasted tomatoes and feta together to form a creamy sauce.
  7. Toss the cooked pasta in the creamy feta and tomato sauce until well coated.
  8. Serve hot, garnished with torn basil leaves and a sprinkle of red pepper flakes if desired.
