  • 1 cup quinoa, cooked
  • 1 ripe mango, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup almonds, toasted
  • Dressing: 3 tablespoons olive oil, 2 tablespoons balsamic vinegar, salt, and pepper to taste


  1. Cook quinoa according to package instructions and let it cool.
  2. In a large bowl, combine quinoa, mango, cherry tomatoes, cucumber, red onion, cilantro, feta cheese, and almonds.
