  • 1 cup quinoa, cooked and cooled
  • 2 ripe mangoes, diced
  • 1/2 cup fresh basil, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste


  1. In a large bowl, combine the cooked quinoa, diced mangoes, chopped basil, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
