Lime Coconut Quinoa Bowl
- 1 cup quinoa
- 1 ½ cups coconut milk
- Juice of 2 limes
- 1 cup diced pineapple
- 1/2 cup shredded coconut
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Rinse quinoa under cold water.
