Lime Coconut Quinoa Bowl

Ingredients

  • 1 cup quinoa
  • 1 ½ cups coconut milk
  • Juice of 2 limes
  • 1 cup diced pineapple
  • 1/2 cup shredded coconut
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a saucepan, combine quinoa and coconut milk. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine cooked quinoa, diced pineapple, shredded coconut, lime juice, and chopped cilantro. Toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
