Lentil Walnut Loaf
Ingredients
- 2 cups cooked lentils
- 1 cup chopped walnuts
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 carrot, grated
- 1 bell pepper, diced
- 1 cup breadcrumbs
- 2 eggs (or flax eggs for a vegan option)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a loaf pan and set aside.
- In a large bowl, mix together the cooked lentils, chopped walnuts, onion, garlic, carrot, bell pepper, breadcrumbs, eggs, tomato paste, paprika, thyme, salt, and pepper.
- Transfer the mixture into the prepared loaf pan, pressing it down evenly.
- Bake for 40-45 minutes or until the loaf is firm and golden on top.
- Allow it to cool for a few minutes before slicing.
- Serve slices with your favorite sauce or gravy.
