  • 2 cups cooked lentils
  • 1 cup chopped walnuts
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, grated
  • 1 bell pepper, diced
  • 1 cup breadcrumbs
  • 2 eggs (or flax eggs for a vegan option)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C). Grease a loaf pan and set aside.
  2. In a large bowl, mix together the cooked lentils, chopped walnuts, onion, garlic, carrot, bell pepper, breadcrumbs, eggs, tomato paste, paprika, thyme, salt, and pepper.
  3. Transfer the mixture into the prepared loaf pan, pressing it down evenly.
  4. Bake for 40-45 minutes or until the loaf is firm and golden on top.
  5. Allow it to cool for a few minutes before slicing.
  6. Serve slices with your favorite sauce or gravy.

Preparation Time: 15 minutes
