  • 2 cups fresh mushrooms, cleaned and halved
  • 3 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine mushrooms, olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper. Toss until mushrooms are well coated.
  3. Spread the mushrooms evenly on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes or until mushrooms are golden brown, stirring halfway through.
  5. Remove from the oven and let them cool for a few minutes before serving.
