Lemon Herb Roast Chicken
- Whole chicken (about 4-5 pounds)
- 1/4 cup olive oil
- 2 lemons, sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Rinse the chicken inside and out; pat dry with paper towels.
- In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
