Lemon Herb Roast Chicken


  • Whole chicken (about 4-5 pounds)
  • 1/4 cup olive oil
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken inside and out; pat dry with paper towels.
  3. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herb mixture over the chicken, both inside and out.
  5. Place lemon slices inside the chicken cavity.
  6. Roast in the preheated oven for about 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 15 minutes before carving.
