  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs (such as parsley, basil, or cilantro), chopped
  • Salt and pepper to taste


  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the rinsed quinoa to the saucepan and toast for 2-3 minutes, stirring occasionally.
  4. Pour in vegetable broth, lemon zest, and half of the lemon juice. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed.
  6. Once cooked, fluff the quinoa with a fork and stir in fresh herbs.
  7. Season with salt, pepper, and additional lemon juice to taste.
  8. Serve the Lemon Herb Quinoa warm as a delightful side dish or as a light main course.
