Lemon Herb Quinoa
- 1 cup quinoa
- 2 cups vegetable broth
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
- 2 cloves garlic, minced

- Salt and pepper to taste
- Rinse the quinoa under cold water and drain.
