  • 4 large artichokes
  • 1/4 cup olive oil
  • 2 lemons, juiced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Preheat the grill to medium-high heat.
  2. Trim the tough outer leaves of the artichokes and cut off the top inch of each artichoke.
  3. Steam the artichokes until they are slightly tender, about 15-20 minutes.
  4. In a bowl, mix together olive oil, lemon juice, garlic, parsley, thyme, salt, and pepper to create the marinade.
  5. Brush the artichokes generously with the marinade, making sure to get between the leaves.
