  • 1 cup couscous
  • 1 ½ cups vegetable broth
  • Juice of 2 lemons
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • Salt and pepper to taste


  1. Bring the vegetable broth to a boil in a medium saucepan.
  2. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a large bowl, whisk together the lemon juice, olive oil, parsley, mint, and dill.
  4. Add the cooked couscous, cherry tomatoes, cucumber, salt, and pepper to the bowl. Toss until well combined.
