Lemon Dill Zucchini Fritters


  • 2 medium zucchinis, grated and drained
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh dill, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil for frying


  1. In a large bowl, combine the grated zucchini, flour, eggs, minced garlic, Parmesan cheese, fresh dill, lemon zest, salt, and pepper. Mix well until combined.
  2. Heat olive oil in a skillet over medium heat.
  3. Scoop about 1/4 cup of the zucchini mixture and place it onto the skillet, flattening it slightly with a spatula. Cook for 3-4 minutes on each side or until golden brown and crispy.
  4. Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
  5. Repeat the process with the remaining zucchini mixture, adding more oil to the skillet as needed.
  6. Serve the Lemon Dill Zucchini Fritters warm with your favorite dipping sauce or yogurt-based dressing.
