Lemon Dill Zucchini Fritters
Ingredients
- 2 medium zucchinis, grated and drained
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh dill, chopped
- Zest of 1 lemon
- Salt and pepper to taste
- 2-3 tablespoons olive oil for frying
Instructions
- In a large bowl, combine the grated zucchini, flour, eggs, minced garlic, Parmesan cheese, fresh dill, lemon zest, salt, and pepper. Mix well until combined.
- Heat olive oil in a skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and place it onto the skillet, flattening it slightly with a spatula. Cook for 3-4 minutes on each side or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
