Lemon Dill Potato Salad


  • 2 lbs potatoes, boiled and diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped


  1. Boil the potatoes until fork-tender. Allow them to cool, then dice into bite-sized pieces.
  2. In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, fresh dill, and lemon juice.
  3. Season the dressing with salt and pepper to taste.
  4. Add the diced potatoes, celery, and red onion to the bowl. Gently toss until well coated with the dressing.
  5. Refrigerate the salad for at least 1 hour to allow the flavors to meld.
  6. Before serving, garnish with additional dill and a squeeze of fresh lemon juice if desired.
