Lemon Dill Potato Salad
- 2 lbs potatoes, boiled and diced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh dill, chopped
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- Boil the potatoes until fork-tender. Allow them to cool, then dice into bite-sized pieces.
- In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, fresh dill, and lemon juice.
