  • 12 large mushrooms, cleaned and stems removed
  • 1 cup cooked quinoa
  • 1/4 cup fresh basil, finely chopped
  • Zest of one lemon
  • 2 tablespoons lemon juice
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Olive oil for drizzling


  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together cooked quinoa, chopped basil, lemon zest, lemon juice, feta cheese, salt, and pepper.
  3. Stuff each mushroom cap with the quinoa mixture, pressing gently to pack it in.
  4. Place the stuffed mushrooms on the prepared baking sheet.
