Italian Sausage and Kale Soup
- 1 lb Italian sausage, casings removed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bunch kale, stems removed and leaves chopped
- 1 can (15 oz) diced tomatoes
- 6 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked white beans
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese for serving
- In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces with a spoon.
- Add the chopped onion and garlic to the pot, sautéing until softened.
- Stir in the kale, diced tomatoes, chicken broth, oregano, thyme, salt, and pepper. Bring the soup to a simmer.
- Add the cooked white beans and simmer for an additional 15-20 minutes until the kale is tender.
