Italian Sausage and Kale Soup


  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bunch kale, stems removed and leaves chopped
  • 1 can (15 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cooked white beans
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for serving


  1. In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces with a spoon.
  2. Add the chopped onion and garlic to the pot, sautéing until softened.
  3. Stir in the kale, diced tomatoes, chicken broth, oregano, thyme, salt, and pepper. Bring the soup to a simmer.
  4. Add the cooked white beans and simmer for an additional 15-20 minutes until the kale is tender.
  5. Stir in fresh parsley and adjust seasoning if necessary.
  6. Serve hot, garnished with grated Parmesan cheese.
