  • 4 large potatoes, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together diced potatoes, olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Bake for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through cooking.
  5. Remove from the oven and serve hot.
