  • 2 large eggplants, sliced
  • 1/4 cup honey
  • 3 tablespoons Sriracha sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • Sesame seeds and green onions for garnish
  • Cooking spray


  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
  2. In a small bowl, whisk together honey, Sriracha sauce, soy sauce, minced garlic, sesame oil, and rice vinegar to create the glaze.
