  • Carrot ribbons – 4 cups
  • Honey – 1/4 cup
  • Balsamic vinegar – 2 tablespoons
  • Olive oil – 2 tablespoons
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon (freshly ground)
  • Fresh parsley (chopped) – for garnish


  1. Start by washing and peeling the carrots. Using a vegetable peeler, create thin ribbons from the carrots.
  2. In a bowl, mix honey, balsamic vinegar, olive oil, salt, and black pepper to create the glaze.
  3. Heat a skillet over medium heat. Add the carrot ribbons and pour the glaze over them.
  4. Sauté for 3-4 minutes or until the carrots are tender but still have a slight crunch.
  5. Remove from heat and garnish with freshly chopped parsley.
