  • 4 large potatoes, washed and diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced potatoes with olive oil, rosemary, thyme, garlic powder, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Bake for 30-35 minutes or until the potatoes are golden brown and crispy, flipping them halfway through to ensure even cooking.
  5. Remove from the oven and let them cool for a few minutes before serving.
