Hearty Minestrone Soup Delight
- 1 cup diced carrots
- 1 cup celery, chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 cup green beans, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 cup small pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Saute onions, carrots, celery, and garlic in olive oil until softened.
- Add zucchini, green beans, and continue cooking for 5 minutes.
