  • 2 cups butternut squash, diced
  • 1 cup sweet potatoes, chopped
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed
  • 1 cup cauliflower florets
  • 1 can chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil


  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add curry powder and turmeric, stir well.
  4. Add butternut squash, sweet potatoes, carrots, green beans, and cauliflower. Cook for 5 minutes.
  5. Pour in coconut milk, add chickpeas, and season with salt and pepper. Simmer until vegetables are tender.
  6. Serve hot over rice or with naan bread.
