Harvest Vegetable Curry Feast
- 2 cups butternut squash, diced
- 1 cup sweet potatoes, chopped
- 1 cup carrots, sliced
- 1 cup green beans, trimmed
- 1 cup cauliflower florets
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Heat vegetable oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until fragrant.
- Add curry powder and turmeric, stir well.
- Add butternut squash, sweet potatoes, carrots, green beans, and cauliflower. Cook for 5 minutes.
- Pour in coconut milk, add chickpeas, and season with salt and pepper. Simmer until vegetables are tender.
