  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 3 tablespoons harissa paste
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 large tortillas
  • Sliced veggies (lettuce, tomatoes, cucumbers, etc.) for filling
  • Tahini sauce or yogurt dressing for topping



  1. Preheat the oven to 400°F (200°C). Pat dry the chickpeas using a paper towel.
  2. In a bowl, mix the chickpeas with olive oil, harissa paste, cumin, salt, and pepper until well coated.
  3. Spread the chickpeas on a baking sheet and roast in the oven for 25-30 minutes, or until crispy.
  4. Warm the tortillas and assemble the wraps by adding roasted chickpeas and sliced veggies. Drizzle with tahini sauce or your preferred dressing.
