Harissa Roasted Chickpea Wraps
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 3 tablespoons harissa paste
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 4 large tortillas
- Sliced veggies (lettuce, tomatoes, cucumbers, etc.) for filling
- Tahini sauce or yogurt dressing for topping
- Preheat the oven to 400°F (200°C). Pat dry the chickpeas using a paper towel.
