Harissa Roasted Chickpea Salad


  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped


  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, harissa paste, cumin, salt, and pepper until well coated.
  3. Spread the chickpeas on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden and crispy.
  4. While the chickpeas are roasting, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, feta cheese, and mint leaves in a large bowl.
  5. Once the chickpeas are done, let them cool slightly before adding them to the salad.
  6. Toss everything together and serve immediately.
