Harissa Roasted Butternut Squash



  • 1 medium-sized butternut squash, peeled, seeded, and diced
  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish



  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced butternut squash, olive oil, harissa paste, honey, cumin, smoked paprika, salt, and pepper. Toss until the squash is evenly coated.
  3. Spread the seasoned butternut squash on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes or until the squash is tender and slightly caramelized, stirring halfway through.
  5. Remove from the oven and garnish with fresh cilantro before serving.
