  • 2 large eggplants
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. Preheat the grill to medium-high heat.
  2. Slice the eggplants into 1/2-inch rounds.
  3. In a small bowl, mix the harissa paste, olive oil, cumin, salt, and pepper.
