Grilled Zucchini Ribbon Salad


  • 3 medium zucchinis
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons balsamic glaze
  • 1/4 cup fresh basil, chopped


  1. Preheat your grill to medium-high heat.
  2. Using a vegetable peeler, create zucchini ribbons by peeling the zucchinis lengthwise.
  3. In a bowl, toss the zucchini ribbons with olive oil, salt, and pepper.
  4. Grill the zucchini ribbons for 2-3 minutes per side or until they have nice grill marks.
  5. Transfer the grilled zucchini to a serving platter and let them cool slightly.
  6. Top the zucchini ribbons with cherry tomatoes, feta cheese, and fresh basil.
