Grilled Lemon Herb Tofu Skewers


  • 1 block of firm tofu, pressed and cubed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Vegetables of your choice for skewering


  1. In a bowl, whisk together olive oil, lemon juice, oregano, thyme, salt, and pepper to create the marinade.
  2. Cut the tofu into cubes and marinate in the mixture for at least 30 minutes.
  3. Thread the marinated tofu and vegetables onto skewers.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the tofu is golden and vegetables are tender.
