Grilled Lemon Herb Chicken Thighs


  • 6 bone-in, skin-on chicken thighs
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped


  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix lemon zest, lemon juice, minced garlic, chopped parsley, salt, and pepper.
  3. Place chicken thighs in a resealable bag or container, pour the marinade over the chicken, and coat evenly. Marinate for at least 30 minutes in the refrigerator.
  4. Remove chicken from the marinade and grill for 6-8 minutes per side or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for a few minutes before serving. Garnish with additional chopped parsley and lemon wedges if desired.
