Greek Quinoa Salad Bowl


  • 1 cup quinoa, rinsed and cooked
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste


  1. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Adjust seasoning if needed. Serve immediately or refrigerate for later. Enjoy!
