Ingredients

  • 1 cup orzo pasta
  • 3 cups fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/3 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh oregano for garnish (optional)

Instructions

  1. Cook orzo pasta according to package instructions. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooked orzo, chopped spinach, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
  3. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Garnish with fresh oregano if desired. Serve and enjoy!
