Ingredients

  • 4 large potatoes, peeled and cut into wedges
  • 1/3 cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato wedges with olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper until well coated.
  3. Transfer the potatoes to a baking dish and pour chicken broth over them.
  4. Cover the dish with foil and bake for 30 minutes.
