Ingredients

  • 1 cup quinoa, rinsed and cooked
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup extra-virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
