Greek Goddess Cucumber Salad

Ingredients

  • 3 large cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
  5. Before serving, taste and adjust seasoning if needed. Garnish with extra feta and parsley if desired.
