  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 4 cups cooked quinoa or brown rice
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tzatziki sauce
  • Salt and pepper to taste


  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, and cooked quinoa or brown rice.
