Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 cup broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup soy sauce
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • Sesame seeds and green onions for garnish

Instructions

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  3. In a large pan or wok, heat sesame oil over medium-high heat. Add broccoli, bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, ginger, honey, rice vinegar, and cornstarch slurry.
  5. Pour the sauce over the vegetables in the pan. Add cooked quinoa and toss everything together until well coated and heated through.
