Ginger Soy Glazed Mushroom Skewers

Ingredients

  • 1 lb fresh mushrooms, stems removed
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Wooden skewers, soaked in water for 30 minutes
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. In a bowl, mix soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sesame oil.
  2. Add mushrooms to the marinade, toss to coat evenly, and let sit for 20-30 minutes.
  3. Preheat grill or grill pan over medium heat. Thread marinated mushrooms onto skewers.
  4. Grill skewers for 5-6 minutes on each side, brushing with remaining marinade while cooking.
  5. Once mushrooms are tender and slightly charred, remove from heat.
  6. Sprinkle with sesame seeds and chopped green onions before serving.
