  • 4 cups vegetable broth
  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 cup shiitake mushrooms, sliced
  • 1 cup tofu, cubed
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Cooked rice or noodles for serving


  1. In a large pot, heat the vegetable broth over medium heat.
  2. Whisk in the miso paste until well combined.
  3. Add soy sauce, sesame oil, grated ginger, and minced garlic. Stir to combine.
  4. Add shiitake mushrooms and tofu to the pot. Simmer for 10-15 minutes.
  5. Once mushrooms are tender, add sliced green onions and sesame seeds. Stir well.
  6. Remove from heat and serve the soup over cooked rice or noodles.
