Garlic Herb Grilled Eggplant
- 2 large eggplants, sliced
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1/4 cup olive oil
- Salt and pepper to taste
- Preheat your grill to medium-high heat.
- In a small bowl, mix together garlic, rosemary, thyme, olive oil, salt, and pepper.
