  • 2 large eggplants, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste


  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Brush both sides of the eggplant slices with the herb mixture.
  4. Place the eggplant slices on the grill and cook for 3-4 minutes per side or until grill marks appear and the eggplant is tender.
  5. Remove from the grill and serve immediately.
