  • 2 large eggplants, thinly sliced
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling


  1. Preheat your oven to 375°F (190°C).
  2. Place the sliced eggplants on a baking sheet, drizzle with olive oil, and bake for 15 minutes or until tender.
  3. In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, chopped basil, salt, and pepper.
  4. Spread a spoonful of marinara sauce on each eggplant slice, followed by a spoonful of the cheese mixture.
  5. Roll up the eggplant slices and place them seam-side down in a baking dish.
  6. Top the roll-ups with the remaining marinara sauce and sprinkle with additional mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven, let it cool for a few minutes, and serve.
