Eggplant Parmesan Roll-ups
Ingredients
- 2 large eggplants, thinly sliced
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg, beaten
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Place the sliced eggplants on a baking sheet, drizzle with olive oil, and bake for 15 minutes or until tender.
- In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, chopped basil, salt, and pepper.
