  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups fresh spinach leaves, washed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cooked basmati rice for serving


  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onions and garlic, sauté until golden brown.
  3. Add curry powder, cumin, coriander, and turmeric. Stir well.
  4. Add chickpeas, diced tomatoes, and spinach. Cook until spinach wilts and chickpeas are heated through.
  5. Season with salt and pepper to taste.
  6. Serve over cooked basmati rice.
